Which wine should you choose for each type of fish?

Not all fish pair well with the same wines. The texture of their flesh, their aromatic richness, the way they are cooked, and the presence of a sauce all directly influence your choice of bottle. Achieving a successful food and wine pairing is above all about finding the right balance between the intensity of the dish and that of the wine.

 

With cod, sole, or whiting

White fish with delicate flesh call for fresh wines to preserve their subtlety. Lively and mineral-driven white wines are the best partners here.

A Sancerre, a Chablis or a Muscadet will pair perfectly with steamed cod, sole meunière, or poached whiting. Their bright acidity brings vibrancy without overpowering the fish’s flavors.

 

With salmon, turbot, or monkfish

Richer and more full-bodied, salmon, turbot, or monkfish require wines with more structure and body.

A Burgundy Chardonnay, a Viognier from the Rhône Valley, or a Chenin Blanc from Loire pair particularly well with these dishes, especially when served with a sauce, roasted, or simply grilled. For smoked salmon, a Brut Champagne or a crisp white wine remain reliable choices.

 

With tuna or grilled fish

Tuna, swordfish, and certain grilled fish have a firmer texture that allows for pairings with a light, low-tannin red wine. A Burgundy Pinot Noir, an Alsace Pinot Noir or a fruity Gamay such as a Saint-Amour can, for example, accompany these dishes with great elegance. Rosé lovers will also be able to opt for a fresh and fruity Côtes-de-Provence cuvée to pair with a fish barbecue.

 

With raw or smoked fish

Raw, smoked, or marinated fish, such as carpaccio, tartare, or smoked salmon, pair perfectly with lively and crisp white wines. A Loire Sauvignon Blanc, an Alsace Riesling, or certain Champagnes will showcase all their finesse here thanks to their freshness, minerality, and vibrant acidity.

 

The main grape varieties and appellations

Achieving the perfect food and wine pairing with fish depends as much on the choice of appellation as on the grape varieties. Wines offering beautiful acidity, a balanced structure, and precise aromatic expression are generally the most suitable to accompany the delicacy of fish flesh without ever overpowering it.

-Chardonnay is one of the most versatile grape varieties. Depending on its terroir and aging, it can produce taut and mineral wines, as in Chablis, or fuller and more generous wines in Burgundy, especially on the Côte de Beaune.

-Sauvignon Blanc stands out in appellations such as Sancerre or Pouilly-Fumé, where its freshness and liveliness pair perfectly with white fish, shellfish, or seafood-based dishes.

-Riesling will also appeal thanks to its tension and aromatic precision.It will also pair divinely well with seafood as well as delicate and premium fish.

-A Loire Valley Chenin Blanc, a Viognier from the Rhône Valley, or a Vermentino from Corsica will offer more body to accompany salmon, monkfish, or fish in sauce. Finally, Melon de Bourgogne, the iconic grape of Muscadet, remains an essential reference with oysters, shellfish, and many fish recipes.

Appellations can also be an interesting basis for selecting your wine. Among the most renowned references for pairing with seafood, the Loire Valley stands out with famous names such as Sancerre, Pouilly-Fumé or Muscadet. The AOC Alsace is also renowned for its fresh, mineral-driven white wines such as Riesling.

In Burgundy, Chardonnay expresses itself through a wide diversity of terroirs and appellations. Villages like Saint-Véran, Viré-Clessé, Saint-Romain, Meursault, Puligny-Montrachet or Chassagne-Montrachet produce wines with highly varied profiles, ranging from the most taut and mineral cuvées to richer, more generous whites. The choice will primarily depend on the fish, its method of preparation, and whether a sauce is present.
