Organic, biodynamic, natural wine: the differences

The distinctions between organic wine, biodynamic wine and natural wine are based on how each estate manages its vines, agriculture, and winemaking.

Thus, organic wine is produced from grapes grown through farming without pesticides or synthetic chemicals and with limited doses of sulfites. All products used in winemaking by an estate must also be certified organic (yeasts, for example).

Biodynamic wine goes even further: it incorporates certain esoteric principles such as respecting lunar cycles, using natural preparations in the vineyard, and promoting overall harmony between nature, the estate, and the terroir. The two main labels certifying biodynamics are  Demeter and Biodyvin. These guarantee strict adherence to these practices, from cultivation to bottling. 

Finally, natural wine is characterized by minimalist winemaking: the estate cultivates its vines at least organically and intervention in the cellar is kept to an absolute minimum.Added sulfites, for example, are often nonexistent and the wines aim to be a reflection of the terroir, combining fruit, purity, and roundness.

Biodynamic white wines

Biodynamics applied to white wine is based on farming that respects the soil, the vine, and natural cycles. Each estate committed to biodynamics works its plots as a living organism, minimizing inputs as much as possible, both in the vineyard and during winemaking.

Thus, just like organic farming, biodynamics prohibits the use of synthetic pesticides in the vineyard. Nevertheless, biodynamics goes further in the application of certain principles, especially in winemaking. For example, the maximum authorized doses of added sulfites are lower here than those allowed in organic wines. Furthermore, many other inputs permitted in organic farming are prohibited. The result? Biodynamic white wines often display a beautiful fruit purity as well as a very pleasant natural freshness: the terroir stands out!

The biodynamic approach, more demanding than the simple organic label, is now recognized in France and around the world. To date, however, only  1% of French vineyards have been converted to biodynamics, compared to more than 20% for "standard" organic. Nevertheless, many renowned estates, from the Rhône to Languedoc, including Alsace and Burgundy, follow this type of agriculture.

For example, one can think of Domaine Bernard Fleuriet et Fils in Sancerre, Château de la Selve in the Rhône Valley, or the excellent  Mas Cal Demoura in Languedoc-Roussillon.

 

The regions of biodynamic white wines

All wine regions in France are involved in biodynamics. Nevertheless, certain AOP and IGP stand out in particular for their growing commitment.

In the Rhône Valley, appellations such as Saint-Joseph or Saint-Péray, for example, produce superb white wines, with beautiful tension as well as a very pleasing roundness.

In Languedoc, the diversity of soils and a favorable climate also make it possible to create biodynamic white cuvées combining ripe fruit and saline freshness. Indeed, although the region is mainly a producer of red wines (AOP Pic Saint-Loup, IGP Pays d'Oc, etc.), many biodynamic white wines are worth discovering.

In Burgundy, several winemakers have shifted their agriculture towards biodynamics in order to achieve greater aromatic precision in their wines. Thus, while biodynamic red wine remains more widespread (easier to produce thanks to better preservation due to the presence of tannins), the rise of whites continues.

Finally, Corsica and Provence are also important playgrounds for both organic and biodynamic agriculture.

 

Pairings with biodynamic white wines

Biodynamic white wines stand out for their purity, freshness, and aromatic precision, making them ideal companions for many dishes.
