Which wines to choose with oysters?

Oysters are among the most delicate seafood to pair. Their meaty texture, briny flavors, and freshness require a wine that can maintain the balance of the tasting experience without overpowering it.The best pairings are generally based on crisp, elegant dry white wines, whose acidity brings freshness while enhancing the aromas and marine notes of the shellfish

Another common pitfall: choosing an overly oaky white wine or one lacking freshness. Oysters pair much better with lively wines that have good acidity, which can enhance their marine aromas without overwhelming them.

Finally, make sure not to serve your bottle too cold. A serving temperature between 8-10°C for a fresh, light white wine generally allows the fruit notes (citrus, white fruits) to be ideally revealed, as well as the minerality present, while maintaining the essential freshness to pair with the freshness of the oyster.

Finally, while Champagne, Chablis or Sancerre are always safe choices, the best pairing will always depend on the quality of the oysters, on how they are prepared and the other dishes served at the table.
