AOC Pommard

The Pommard AOC is located in the heart of the Côte de Beaune and covers about 350 hectares of vineyards, exclusively planted with Pinot Noir. More than 30% of the vineyard is classified as Premier Cru, spread over 28 climats, often situated on steep slopes with ideal exposures. In the north of the appellation, the wines generally display an elegant and supple style, while the southern part usually produces more structured and tannic cuvées. After a few years in the bottle, many of them develop a distinguished character, evolving towards characteristic animal nuances.

History and Origin of the Pommard Appellation

The Pommard appellation is among the oldest and most iconic wine references in Burgundy

Since the Middle Ages, its wines have indeed enjoyed a solid reputation throughout Europe and have appeared on the tables of the Dukes of Burgundy as well as major religious institutions.

In the 19th century, knowledge of the vineyard advanced with the precise identification of the "climats", these plots defined by their geological and exposure characteristics, which still today form the hierarchy and uniqueness of Burgundy crus.

In 1936, the official recognition of the appellation established the identity of Pommard: a great red wine made from Pinot Noir, structured and deep, the result of an exceptional terroir and know-how passed down from generation to generation.

Today, Pommard is one of the most emblematic appellations of the Côte de Beaune and remains an essential reference for lovers of great red Burgundy wines. Its wines are distinguished by their structure, depth, and aging potential

Terroir of the Pommard appellation

Located in the immediate vicinity of Beaune, the Pommard appellation is based on clay-limestone soils mixed with iron oxides, giving the wines their structure and depth.

The vines here stretch across ideally exposed hillsides, promoting the optimal ripening of Pinot Noir.

The plots classified as Premier Cru generally occupy the best-located slopes, where the stonier soils and better exposure enhance the concentration and complexity of the wines. They give rise to deep, structured cuvées designed for aging, capable of developing over time into complex and distinguished aromas.

Within Burgundy, Pommard is certainly among the finest red wine appellations, alongside Nuits-Saint-Georges, Gevrey-Chambertin, Vosne-Romanée, and Corton.

Wine styles of the Pommard AOC

The red wine from the Pommard appellation is among the most structured expressions of Burgundy. In its caricatured image, this appellation is indeed distinguished by powerful wines, built for aging, while maintaining real finesse when the terroir and the estate's work are mastered.

Thus, a Pommard is generally recognized by its deep red color, often dark ruby to garnet, a pronounced tannic structure, aromas of ripe black fruits (black cherry, blackberry), spices, and sometimes leather as it evolves.

Moreover, while Pommard's reputation was long built on powerful and tannic profiles, contemporary winemakers now seek greater precision and balance, highlighting the finesse of the fruit and the expression of the terroirs. Thus, depending on the estate, the style can vary significantly.

Parcels located on more calcareous soils, for example, produce more elegant wines, while areas rich in clay yield denser and more powerful red wines. This diversity of profiles perfectly illustrates the Burgundian concept of "climat", which is essential to understanding the hierarchy of crus in the region.

The Premier Crus of Pommard

Although there is no Grand Cru in the village of Pommard, 28 "Premier Cru" climats are distinguished within the appellation.

The cuvées from these Premier Cru terroirs represent the qualitative peak of the appellation. These wines produced there display an above-average aromatic complexity, concentrated substance, and a high aging potential, often justifying a higher price. Some plots of great renown, such as: "Les Rugiens" or "Les Épenots".

In the Burgundy wine landscape, Pommard also occupies a unique position. The appellation, for example, produces wines that are often more robust than those of Nuits-Saint-Georges, which are also renowned for their structure but are often more supple. This identity makes Pommard an essential reference for enthusiasts seeking characterful red wines, capable of accompanying rich dishes and standing the test of time.

Thus, between power, depth, and aging potential, the wines of the Pommard appellation perfectly illustrate the diversity and nobility of the great Burgundy wines.

Which dishes enhance a Pommard wine ?

The red wines of the Pommard appellation are among the most full-bodied crus of Burgundy. In other words, these wines enjoy the company of generous and flavorful dishes. A Pommard does not settle for a light meal: it expresses its full potential when paired with a indulgente and well-constructed cuisine, capable of revealing the richness of its tannins and the depth of its aromas.

With a beautiful piece of grilled or roasted beef, the pairing is almost natural. The juicy meat then enhances the tannins of the wine, which become softer and more silky. Rare duck breast or slow-cooked meat, whether it is beef bourguignon, stew, or civet, will also highlight the spicy nuances and aromatic depth of Pommard red wines.

Game enthusiasts will also find excellent pairings. Venison in sauce, pheasant, or matured poultry allow the complexity and structure of the wine to stand out, especially for Premier Cru cuvées from renowned vineyards. Over time, these wines develop animal or slightly truffle notes, which pair perfectly with this type of dish.

For successful pairings, service plays a key role. Pommard should ideally be served between 14 and 16°C. Served too warm, the wine may seem too alcoholic and heavy; too cold, it will lose its expression and aromatic richness.

Young cuvées also often benefit from being opened an hour before the meal, or even from a light decanting, while older bottles require more gentleness to preserve their aromas and elegance.

Served under the right conditions and paired with a dish worthy of it, a Pommard becomes a true table wine in the noblest sense of the term: a wine that enhances the meal, transforms the moment into an experience indulgente and recalls all the expertise of the estates of this prestigious Burgundy appellation.

How to choose a good Pommard wine ?

Choosing a good Pommard requires a minimum of attention if you want to find a bottle that matches your tastes and the occasion. Located at the gates of Beaune, the appellation produces exclusively red Pinot Noir wines renowned for their structure, but also for their elegance. The style can vary significantly depending on the estates, the terroirs, and the winemaking choices.

The producer indeed plays a decisive role. Some estates favor finesse and precision of the fruit, resulting in harmonious and balanced wines, while others seek more power and density, with more pronounced tannins and a more robust body. This diversity allows everyone to find a style that matches their preferences.

The classification level is also an essential reference point. A Pommard "village" generally offers a structure that is accessible after a few years in the bottle, ideal for discovering the appellation. The Premier Crus, from the best slopes, offer greater depth and complexity, as well as a higher aging potential.

Finally, price and the cultivation method (organic, biodynamic, sustainable, etc.) are also key factors to consider.Do not hesitate to seek advice from La Cave Éclairée!

In the end, choosing a Pommard well means adapting your choice to the moment : a red indulgent and structured to accompany a friendly meal, or a more ambitious cuvée to mark a special occasion or celebrate the simple pleasures of life with friends.
