Nebbiolo is a flagship grape variety of Piedmont, widely grown in the Langhe, around Alba, in northern Italy. This grape variety is the origin of some of the world's greatest red wines, notably the famous Barolo and Barbaresco, two renowned appellations classified as DOCG, the highest level in Italy.

Visually, red wine made from Nebbiolo is distinguished by a relatively light color, often ruby, quickly evolving towards more brick-like hues over time due to its sensitivity to oxidation. This apparent lightness, however, contrasts with the richness of its structure.

On the palate, this Italian grape variety indeed reveals a pronounced character, carried by marked tannins and a beautiful acidity. This balance gives the best Nebbiolo wines significant aging potential.

On the aromatic level, Nebbiolo offers a complex and evolving palette. In its youth, it develops aromas of rose, violet, and fruits such as cherry. Over the years, the profile gains depth, revealing notes of spices, leather, or truffle.

Food and wine pairings: what to eat with a Nebbiolo ?

The most successful pairings are based on flavorful dishes, able to match the intensity of the grape variety.Here are some examples:

  • Grilled or braised red meats : a rib of beef, a grilled fillet, or a slow-braised meat find perfect balance with the power of Nebbiolo. The tannins blend with the proteins, offering a harmonious tasting experience.
  • Stewed dishes : long-cooked recipes such as beef bourguignon, daube, or a stew reveal all the richness of the wine. The concentrated flavors of the dish match the aromatic complexity of Nebbiolo.
  • Game : venison, wild boar, or wild duck pair particularly well with the great appellations of Piedmont. These intense dishes highlight the structure and length on the palate of the wine.

A tasting temperature between 16 and 18°C, for example, will help preserve the balance between freshness and structure of your cuvée. Additionally, decanting for one to two hours is also recommended for young wines, in order to soften the tannins and release their aromas.

The most prestigious appellations are located in Piedmont, in the heart of the Langhe, around the village of Alba:

  • Barolo DOCG: often considered the "king of wines", this powerful red wine made from Nebbiolo stands out for its tannic structure, depth, and incredible aging potential.
  • Barbaresco DOCG: generally more approachable than Barolo in its youth, this appellation offers elegant, refined, and highly aromatic Nebbiolo wines, while maintaining beautiful complexity.
