Created in 2014, the AOC Terrasses du Larzac is a young appellation located north of Montpellier. Its vineyard covers nearly 2,000 hectares and produces exclusively red wines, mainly from Syrah, Grenache noir, and Mourvèdre, as well as other minor varieties such as Carignan or Cinsault. History of the Terrasses du Larzac appellation

The Terrasses du Larzac vineyard is part of a history spanning more than two millennia, deeply rooted in the wild landscapes of Languedoc, between limestone reliefs, plateaus, and valleys.

As early as the Gallo-Roman period, the vine was established in the region under the impetus of Roman settlers, who then structured the first crops and organized commercial exchanges. The poor soils, natural terraces, and warm yet breezy climate quickly provided ideal conditions for characterful viticulture.

In the Middle Ages, the vineyard developed thanks to religious communities, notably institutions such as the Abbey of Saint-Guilhem-le-Désert. The monks then played a fundamental role: they organized the agricultural landscape, demarcated the plots, and improved cultivation practices.

Despite crises, notably the phylloxera outbreak at the end of the 19th century, the vineyard was rebuilt. This period also marked a shift towards a more structured production, sometimes oriented towards volume, but maintaining an identity linked to the diversity of soils (limestone, schist, sandstone) and altitude.

The second half of the 20th century marked a decisive turning point. A new generation of winemakers then chose to fully showcase the potential of their terroir : controlled yields, plot selection, and precise work in the cellar were implemented. This rise in standards led to the official recognition in 2014 of Terrasses du Larzac as an appellation d’origine contrôlée.

Previously, the cuvées produced locally were sold under the banner of the regional appellation: AOC Coteaux du Languedoc (then AOC Languedoc).

Today, Terrasses du Larzac stands out as one of the most dynamic terroirs in the south of France. The red wines of the AOP captivate with their balance between power and freshness, their aromatic complexity and their ability to finely express their origin.Driven by committed winemakers and a strong identity, the appellation perfectly embodies the qualitative renewal of Languedoc.

 

What are the main grape varieties of AOC Terrasses du Larzac wines ?

The Terrasses du Larzac vineyard is based on typical Languedoc grape varieties, each bringing a very distinct personality.

Syrah is the most prevalent variety and holds an essential place within the vineyard: this grape thrives in the coolness of Terrasses du Larzac and generally develops notes of violet, licorice, and dark fruits. Its structure and elegance are particularly well expressed on this breezy terroir.

Grenache noir offers a sunnier profile. Its berries, rich in sugar, produce generous and velvety juices, often marked by aromas of ripe red fruits. On the limestone soils of Larzac, it gains in balance and perfectly supports the identity of the appellation.


Mourvèdre, Mediterranean grape variety par excellence, brings depth and power. It appreciates the southern warmth, while benefiting from cool nights to maintain a beautiful tension. It develops animal notes and aromas of plum, spices, and garrigue, echoing the surrounding landscape.

To these three pillars are added other minority varieties such as Carignan, Cinsault, as well as the local Lledoner Pelut, Counoise, and the rarer Morrastel and Terret noir.

 

The wine styles of the AOC Terrasses du Larzac

Although the Terrasses du Larzac appellation produces exclusively red wines, the range of styles remains very diverse. Each estate or each Mas has its own vision here, and each plot of terroir brings a different nuance to the tasting.

Some producers, for example, seek a full-bodied and sun-drenched style, faithful to the traditional identity of Languedoc. This type of cuvée often highlights generous aromas of ripe black fruits: blackberry, blackcurrant, plum, enriched with warm notes of sweet spices, pepper, licorice, or even cocoa. The palate is often broad, flavorful, supported by a beautiful roundness.

Other estates, taking advantage of the thermal amplitudes of the Larzac, favor fresher and more elegant expressions. These wines generally offer a generous but more precise aromatic profile, fine tannins, and a lovely natural tension. The notes then tend more towards morello cherry, dried herbs, garrigue, bay leaf, or even floral touches.

The diversity of soils (limestone, scree, stony terraces, or more clayey areas), also plays a key role in this plurality of styles. Some plots produce powerful and structured wines, while others favor lighter and more delicate expressions.

Finally, vinification and aging choices are also decisive.Aging in stainless steel or concrete tanks tends to preserve the purity of the fruit, while long aging in oak barrels brings roundness and power.

In general, the wines of Terrasses du Larzac can be enjoyed both in their youth but also are age-worthy. The most ambitious cuvées of the appellation can easily be kept for 10 years or more and then develop tertiary aromas, reminiscent of undergrowth, leather, and minty freshness.

Ultimately, Terrasses du Larzac brings together a multitude of styles : from deep and structured reds to fresher wines, including indulgenteasy and approachable interpretations. It is this diversity that today gives the appellation its strength and its charm among wine enthusiasts of Languedoc-Roussillon.

 

What are the best food pairings for Terrasses du Larzac wines ?

Thanks to their aromatic intensity and beautiful structure, the red wines of Terrasses du Larzac offer great versatility at the table. Their balance between generosity and freshness allows them to accompany both rich dishes and more delicate cuisines.

When it comes to classic pairings, they are fully expressed alongside flavorful meats: a grilled lamb chop, duck breast with figs, or a tagine with mild spices perfectly highlight their aromas of dark fruits, garrigue, and spices. Slow-cooked dishes, such as a stew or a dish with sauce, also work very well, echoing the depth and texture of the wine.

But these Languedoc reds are not limited to meat pairings.
