The AOC Minervois is located in two departments: Aude and Hérault and covers 5,000 hectares, between Carcassonne and Béziers. The vineyard is one of the largest in the Languedoc-Roussillon region and mainly offers red wines (83%), as well as rosés (14%) and whites (3%). The climate here is hot and dry and the vines are protected from the northern winds by the Montagne Noire. The terroir of the appellation is schistose but also clay-limestone.The main grape varieties used are Grenache, Syrah, and Mourvèdre for red wines, as well as white Grenache, Malvoisie, Maccabeu, and Marsanne and Roussanne for white wines.
