The AOC Minervois is located in two departments: Aude and Hérault and covers 5,000 hectares, between Carcassonne and Béziers. The vineyard is one of the largest in the Languedoc-Roussillon region and mainly offers red wines (83%), as well as rosés (14%) and whites (3%). The climate here is hot and dry and the vines are protected from the northern winds bythe Montagne Noire. The terroir of the appellation is schistous but also clay-limestone. The main grape varieties used are grenache, syrah and mourvèdre for red wines as well as white grenache, malvoisie, maccabeu and also marsanne and roussanne for white wines.Wines generally express a beautiful fruitiness and can have a certain aging potential if they come from the best plots.
