Domaine Chavy-Chouet

Located in Meursault, the Chavy-Chouet estate embodies all the elegance of the great wines of Côte de Beaune. While the family roots have been in viticulture for several generations, it was in 2006 that Romaric Chavy gave new impetus to the estate by bringing together plots from both family lines. The vineyard, covering approximately 15 hectares, now spans several iconic appellations of Burgundy, including Meursault, Puligny-Montrachet, Saint-Aubin, and Pommard. In both the vineyard and the cellar, the estate's work is distinguished by a rigorous approach with meticulous vinification and perfectly controlled barrel aging. The cuvées captivate with their balance, richness, and natural elegance. Refined and complex wines that beautifully express the richness of the great Burgundy terroirs.

Chavy-Chouet estate: a great Burgundy vineyard

Located in the heart of Meursault, the Chavy-Chouet estate stands as a benchmark for fine Burgundy wines. The history of the Chavy and Chouet families is deeply rooted in the region, where vine cultivation and winemaking expertise have been passed down for several generations, with an in-depth knowledge of the terroirs and various appellations.

The current estate truly took shape in 2006, driven by Romaric Chavy. By bringing together the family plots from the two Chavy and Chouet siblings, he then built an estate covering a mosaic of prestigious terroirs around Meursault, but also in neighboring appellations such as Puligny-Montrachet, Volnay, Pommard, and also Saint-Aubin.

This diversity allows the estate to offer a wide range, from "village" wines to Premier Crus, with cuvées from many renowned lieux-dits such as Les Narvaux, Les Charmes, Les Casse-Têtes, Les Genevrières, Les Enseignères, Les Folatières, as well as Les Chanlins, Les Femelottes, Clos de Corvées de Citeau, Les Champs-Gain, or Sous La Chapelle.

Romaric Chavy's work is based on a demanding and contemporary vision of wine.In the vineyard, particular attention is paid to the soils and the natural balance of the plots. In the cellar, the objective is to precisely reveal each terroir and appellation, highlighting the purity of Chardonnay for white wines, and Pinot noir for red wines. Each bottle reflects this pursuit of balance and accuracy. The estate's wines captivate with their precision, elegance, and ability to express all the complexity of Burgundy's soils.

Today, the Chavy-Chouet estate is undoubtedly among the region's essential names, with products sought after for their quality.

Appellations and terroirs of the Chavy-Chouet estate

The vineyard of Domaine Chavy-Chouet covers approximately 15 hectares, in the heart of Burgundy, with a privileged location on the Côte de Beaune. This diversity of plots allows Romaric Chavy to work with a wide range of emblematic appellations, renowned for the quality of their wines and the richness of their terroirs.

The estate is notably present in the following appellations:

  • Meursault (Narvaux, Les Charmes, Les Genevrières, Clos de Corvées de Citeau, Les Casse-Têtes)
  • Puligny-Montrachet (Les Enseignères, Les Folatières, Les Champs-Gain)
  • Saint-Aubin (Les Murgers des Dents de Chien)
  • Volnay (Sous la Chapelle)
  • Pommard (Les Chanlins)
  • Burgundy (Femelottes, La Taupe)
  • Crémant de Bourgogne (Blanc de Blancs)

Each of these terroirs has its own characteristics (soil type, exposure, altitude), directly influencing the style and color of the wines.

The plots dedicated to Chardonnay, the king white grape variety of Burgundy white wines, thus give rise to great precise and elegant white wines, notably in Meursault and Puligny-Montrachet, where minerality and tension are particularly sought after.

On the red wine side, Pinot Noir is expressed in appellations such as Volnay and Pommard, with profiles ranging from finesse to structure.

This richness of terroirs allows the estate to cover the entire Burgundy classification, from village wines to Premiers Crus, thus offering a complete and coherent overview of the region. Each bottle offered for sale and available in our stock (individually or by the case, in 75cl bottles as well as magnums), precisely reflects its origin and the meticulous work carried out both in the vineyard and in the cellar.

The wines of Domaine Chavy-Chouet

Domaine Chavy-Chouet stands out above all for the quality of its white wines, made from Chardonnay. These wines offer a precise interpretation of each appellation, with profiles combining finesse, richness, tension, and balance. The objective is clear: to accurately convey the identity of each terroir through complex and elegant cuvées.

Among the references, the most popular cuvées are:

  • Bourgogne "Les Femelottes": a full-bodied, fresh, and precise white wine, with notes of white fruits and beautiful tension.
  • Puligny-Montrachet "Les Enseignères": a great white wine from Puligny-Montrachet, full-bodied and mineral, with a strong expression of the terroir.
  • Meursault "Les Narvaux": a great Meursault wine, straight and energetic, with beautiful freshness and precise structure.
  • Meursault "Clos de Corvées de Citeau": a full-bodied and structured Meursault cuvée, offering volume on the palate and beautiful complexity.
  • Meursault "Les Casses-Têtes": a balanced white wine, blending ripe fruits, notes of hazelnut, and a harmonious finish.
  • Meursault 1er Cru "Les Charmes": a great Premier Cru from Burgundy, rich and deep, with magnificent length and beautiful intensity.

Note that Domaine Chavy-Chouet also produces red wines from Pinot Noir in appellations such as Bourgogne, Volnay and Pommard. These cuvées reveal another facet of Romaric Chavy's expertise: wines that are both fruity and structured, with fine tannins and beautiful elegance.

Depending on the terroir and vintage, most of the estate's bottles, both white and red, offer a magnificent aging potential.

Food and wine pairings with the cuvées from Domaine Chavy-Chouet

The wines from Domaine Chavy-Chouet offer great aromatic precision and a beautiful diversity of styles, which makes them particularly interesting at the table. Thanks to the finesse of Chardonnay and the elegance of Pinot Noir, each appellation produced at the estate can easily find its place in a delicious food and wine pairing. Here are a few examples to whet your appetite!

Pairings with white wines (Meursault, Puligny-Montrachet…)

The white wines from Domaine Chavy-Chouet, notably Meursault and Puligny-Montrachet, stand out for their balance between richness and minerality.

Thus, the Puligny-Montrachet "Les Enseignères" will, for example, be ideal with seafood, a fish carpaccio or sashimi. Its tension and minerality will perfectly complement iodized dishes.

The Meursault "Les Narvaux" will, on the other hand, be perfect with fish in a light sauce, a sea bass fillet or creamy poultry. Its structure provides body without weighing down the dish.

Finally, the Meursault 1er Cru "Les Charmes" will pair well with richer dishes such as lobster, pan-seared scallops or poultry with morel mushrooms.

Pairings with red wines (Volnay, Pommard, Burgundy)

The red wines made from Pinot Noir from Domaine Chavy-Chouet offer finesse and complexity, which allows for elegant pairings.

The Volnay "Sous La Chapelle" will thus be ideal with white meats. Its natural finesse, delicate tannins, and elegant profile will highlight the tenderness of the meat without ever overpowering it, creating a perfectly balanced pairing.

The Pommard 1er Cru "Les Chanlins" cuvée, more structured, will perfectly accompany a grilled red meat, a duck breast or a rich sauced dish.

Precise pairings for each bottle

Each bottle from the Chavy-Chouet estate is designed to perfectly complement the table. Thanks to their balance and clarity, these wines allow for precise and successful pairings, that are suitable for both everyday meals and more gourmet occasions.

Whether you choose a Meursault white wine, a Puligny-Montrachet, or a Burgundy red wine, you will always find a harmonious food and wine pairing, enhancing both the dish and the cuvée!
