The Domaine du Cellier aux Moines has become in a few years one of the very best properties of its main appellation: Givry. The Pascal family has undertaken a colossal task since 2004, the year of the acquisition. The 10 hectares are now officially converted to organic farming since the 2020 vintage and the conversion to biodynamics is underway. The winery operates entirely by gravity to ensure the integrity of the grapes is respected to the maximum. Since 2015, Guillaume Marko has been in charge of winemaking and the wines produced have, thanks to him, reached a new level in their purity, complexity, and richness.
