The Domaine du Cellier aux Moines has, in just a few years, become one of the very  best estates of its flagship appellation: Givry. The Pascal family has undertaken a  colossal task since 2004, the year of the acquisition. The 10 hectares are now officially certified organic since the 2020 vintage, and the conversion to biodynamics is underway. The winery operates entirely by gravity to ensure the grapes’ integrity is preserved as much as possible. Since 2015, Guillaume Marko has been in charge of winemaking, and thanks to him, the wines have reached a new level of purity, complexity, and richness. A great estate of the Côte Chalonnaise that is an absolute must-discover!
