History of the Cellier aux Moines Estate

The history of Domaine du Cellier aux Moines dates back to the 12th century, when the Cistercian monks from the Abbey of La Ferté settled on the heights of Givry. At a time when Burgundy was just beginning to build its reputation for winemaking, these religious builders already sensed the richness of this still-wild terroir. They constructed a cellar on the heights of the village to store and mature the wine, and established the first vineyard plots on a particularly well-exposed hillside.

These monks, rigorous and close to nature, developed an innovative approach to viticulture for their time. They observed the soils, selected the best locations, structured the plots into terraces, and developed winemaking and aging techniques that would lay the foundations of the Burgundian tradition. The Cellier aux Moines quickly became a renowned place for the quality of its wines, exported beyond the borders of the Duchy of Burgundy.

With the French Revolution, the Church's properties were confiscated and the estate passed into the hands of private owners. Over the centuries, the site's winemaking vocation endured, but experienced varying fortunes. It was only at the beginning of the 21st century that a decisive turning point occurred.

In 2004, the Pascal family, captivated by the history and unique potential of the site, acquired the estate and undertook extensive restoration work. The Cistercian cellar was renovated in keeping with its original architecture, the vineyards were restructured, and a rigorous approach to organic, then biodynamic, viticulture was gradually implemented.

Guided by a desire to enhance this exceptional terroir while respecting the environment, the family restored all the Cellier aux Moines' former glory.Today, the estate’s wines, both red and white, are acclaimed for their finesse, depth, and ability to express the identity of the Givry terroirs. From its monastic origins to its contemporary renaissance, the Cellier aux Moines embodies a vision of viticulture that is both rooted in history and resolutely focused on the future.

A range of wines for every taste

The estate carefully produces a refined selection of red and white wines, all sourced from the finest Burgundy terroirs (beyond Givry, the Pascal family also owns a few ares in the AOC Puligny-Montrachet, Chassagne-Montrachet, and Montagny).

The Pinot Noir, the region's signature grape variety, reveals a remarkable expression here: the red wines are elegant, structured, and characterized by notes of black cherry, raspberry, pepper, and a refined, noble oakiness. Their aging potential varies depending on the vintage but generally exceeds 10 years. Each bottle is carefully matured here and reveals the finesse of the finest terroirs of the Côte Chalonnaise.

The white wines, made from the Chardonnay grape variety, offer superb freshness. They stand out for their pronounced mineral tension, a subtle balance between finesse and generosity on the palate, as well as a beautiful length.

While Givry remains the beating heart of the estate, the Cellier aux Moines also extends its expertise to legendary appellations such as Puligny-Montrachet, Chassagne-Montrachet, Santenay, Mercurey, and Montagny. The estate’s cuvées from these AOCs are available for sale in very limited quantities and embody the quintessence of Burgundy Chardonnay: depth, aromatic purity, and exceptional length.

Each cuvée from Cellier aux Moines is crafted with absolute precision, at the very heart of the estate, in a place where the spirit of the Cistercian monks meets the precision of contemporary facilities. The oak barrel aging, meticulously controlled, perfectly reveals the depth of Pinot Noir as well as the brilliance of Chardonnay, while respecting each terroir and each appellation.Guided by passion, Philippe Pascal brings this centuries-old heritage to life in every bottle by combining tradition, high standards, and subtle innovation. The recent vintages also demonstrate remarkable consistency.

The main cuvées of Domaine du Cellier aux Moines

Domaine du Cellier aux Moines offers cuvées that represent the richness of its terroirs, carefully cultivated on exceptional plots. Each bottle here expresses the typicity of the terroir, the grape variety, and the vintage. Here is an overview of the exceptional bottles offered by the Pascal family.

Givry "Le Petit Cellier"

Conceived as an entry point into the world of the estate, this red cuvée captivates with its immediate charm, while maintaining a beautiful nobility and lovely complexity. Made exclusively from Pinot Noir, "Le Petit Cellier" comes from vines located at the foot of the slope on the Givry terroirs, cultivated with the same care as the parcels classified as Premier Cru. More generous in volume, this cuvée benefits from aging for about 12 months in French oak barrels.

From the very first glance, its bright ruby red color reveals a indulgent wine. The nose opens with a basket of fresh red fruits (wild strawberry, juicy raspberry, redcurrant, etc.), enhanced by a hint of sweet spices and a touch of white pepper. On the palate, the texture is supple, carried by a lovely liveliness and light tannins that give it a great drinkability

The perfect companion for everyday meals, "Le Petit Cellier" can be enjoyed within 5 to 8 years, slightly chilled (14-16°C), with roasted poultry, a vegetable gratin, or a platter of fine charcuterie. It perfectly embodies the elegance of Southern Burgundy: a wine of pleasure offering great aromatic richness, true to the spirit of the estate.

Givry Premier Cru "Clos du Cellier aux Moines"

The estate's signature cuvée, this sublime Pinot Noir comes from a plot enclosed by old walls, once cultivated by Cistercian monks.Nestled halfway up the slope and facing southeast, this enclosed vineyard rests on a soil of brown clays mixed with limestone fragments. Harvested by hand, the grapes are sorted berry by berry and then vinified in open vats, with a subtle proportion of whole clusters to preserve the brightness of the fruit. The aging, lasting about fifteen months, takes place in French oak barrels (one third of which are new), in order to bring complexity without masking the terroir.

To the eye, and in its relative youth, the wine displays an intense ruby red color. The bouquet opens with black cherry and raspberry, then reveals notes of peony, pepper, and a delicately oaked touch reminiscent of sandalwood. On the palate, it combines finesse and density: the attack is crisp and juicy, evolving into a structured mid-palate, supported by finely grained tannins and a mineral freshness that extends the finish.Young, it captivates with its indulgentise; after a few years, it gains in smoothness and reveals nuances of truffle and undergrowth. Its aging potential thus ranges from eight to twelve years, or even longer in great vintages.

Serve it at 14-16 °C with roasted duck breast, quail with chanterelle mushrooms, or matured Brie de Meaux: you will then savor all the nobility of this emblematic premier cru.

Givry Premier Cru “Clos Pascal” Monopole

Confidential jewel of the estate, “Clos Pascal” is a monopole of less than 27 ares surrounded by walls, located just above the Cellier aux Moines.Oriented due east, its old Pinot Noir vines plunge into a thin soil of brown clays mixed with limestone fragments, which rests directly on the bedrock. This mineral matrix, combined with the flows of cool air descending from the nearby valley, gives the wine a unique tension and depth.

The harvest, carried out entirely by hand, is meticulously sorted before a gentle vinification in open truncated-cone vats. A proportion of whole bunches preserves the fruit’s energy, while delicate punching down extracts tannins and color without harshness. The aging, lasting about eighteen months, takes place in French oak barrels, 30% of which are new: just enough to enhance the terroir without overpowering it.

To the eye, “Clos Pascal” displays a deep red color with purple highlights. On the nose, complexity unfolds: black cherry, wild blackberry, violet, followed by hints of licorice stick, nutmeg, and a subtle stony note reminiscent of wet chalk. The  palate impresses with its creamy density, immediately balanced by a finely chiseled acidic structure. The tannins, tight yet velvety, carry a long, saline finish, highlighted by a slight spicy return.

This is a wine for long aging: 10 to 15 years, or even longer in great vintages. It will then develop nuances of leather, undergrowth, and truffle. Serve it at 16°C with roasted pigeon supreme, beef Wellington, or matured Brillat-Savarin cheese to fully appreciate the nobility of this exceptional monopole.

Demanding viticulture, a lasting commitment

At Domaine du Cellier aux Moines, the Pascal family perpetuates the Cistercian heritage by cultivating each plot according to strict organic and biodynamic principles. No herbicides: natural grass cover, light plowing, and vineyard biodiversity encourage the deep rooting of Pinot Noir and Chardonnay.

The harvest, carried out entirely by hand, undergoes a rigorous sorting to keep only the healthiest grapes. In the cellar, indigenous yeasts lead slow fermentations; extraction remains measured, then aging takes place in carefully selected oak barrels to preserve the identity of the terroir.

Controlled yields, virtuous practices, and the alliance of tradition and innovation are reflected in precise, energetic, and sustainable wines: from the deep reds of Givry to the chiselled whites of Puligny‐Montrachet and Chassagne-Montrachet, all embody the same commitment to excellence.

The winemaking process at Domaine du Cellier aux Moines

At Domaine du Cellier aux Moines, each bottle is the result of meticulous work, rooted in the heritage of the Cistercian monks. From the vineyard plot, everything is designed to preserve the purity of the aromas and best express the terroir of Givry and the Côte Chalonnaise.

Manual harvesting and rigorous sorting

The harvest is carried out entirely by hand, often at dawn to preserve the freshness of the grapes. In the cellar, the bunches are sorted on a table to remove any damaged or unripe berries, thus ensuring consistent and optimal quality from one vintage to the next.

Respectful and tailored vinification

For Pinot Noir, the grapes are destemmed and then gently placed in vats. Maceration lasts from 15 to 25 days depending on the year, accompanied by regular punching down and pumping over, to extract an intense color, silky tannins, and complex aromas.

The Chardonnay, on the other hand, is pressed slowly, clarified, then placed in oak barrels or stainless steel tanks according to the desired style. Fermentation relies on indigenous yeasts, with no addition of commercial yeasts or additives, thus ensuring the natural expression of the fruit and the terroir.

Carefully controlled aging to enhance each wine

Aging usually lasts from 10 to 18 months depending on the cuvées, with a moderate proportion of new barrels, chosen to respect and highlight the identity of each wine. This patient work in the cellar refines the structure, enriches the aromas, and guarantees the finesse of both vibrant whites and deep reds.
