The wine : One of the finest wines of its appellation... quite simply! Facing due south on a gently breezy hillside, the Premier Cru Clos du Cellier aux Moines allows the Pascal family to produce an intense, elegant, and concentrated cuvée here. Spices (pepper, cinnamon, vanilla) immediately appear on the nose as well as on the palate, blending with notes of red and black fruits (cherry, blackberry, plum) as well as a subtle floral touch (violet). The tannins are perfectly balanced and give the wine great aging potential overall. A gastronomic Givry!

The estate : Established in 1130, the Domaine du Cellier aux Moines is a property with a very rich and ancient history. To see for yourself, you can read the book " Nine Centuries in the Heart of Burgundy " written by Gilles Platret and the estate’s owner, Philippe Pascal. Since 2004, he and his family have been at the helm of this beautiful 10-hectare property. While the heart of the vineyard is in AOC Givry, the family also owns small plots in Chassagne-Montrachet, Santenay, and Puligny-Montrachet. The vineyard has been certified Organic since 2020 (the first estate in Givry) and biodynamic certification is planned in the coming years. Since 2015, Guillaume Marko has joined the estate to oversee winemaking. The cuvées reach a high level of purity and richness worthy of Burgundy’s elite.
