The wine : It is through the quality of this second wine from Domaine du Cellier aux Moines that one can perceive all the dedication invested in the vineyard by the Pascal family. Le Petit Clos du Cellier is a structured, elegant, and refined Pinot Noir. Its aromas develop on intense and luscious dark fruits (black cherry, blackberry) highlighted by a well-integrated oak with a perfect balance, giving it delicious toasted bread notes as well as a hint of vanilla. The estate : Established since 1130, the Domaine du Cellier aux Moines is a property with a very rich and ancient history. To be convinced, you can read the book " Nine Centuries in the Heart of Burgundy " written by Gilles Platret as well as the owner of the estate, Philippe Pascal. It is the latter who, since 2004, has been at the head of this beautiful 10-hectare property with his family. While the heart of the vineyard is in AOC Givry, the family also owns small plots in Chassagne-Montrachet, Santenay, and Puligny-Montrachet. The vineyard has been certified Organic Farming since 2020 (the first estate in Givry) and a biodynamic certification is planned in the coming years. Since 2015, Guillaume Marko has joined the estate to oversee winemaking. The cuvées reach a high level of purity and richness worthy of Burgundy’s elite.
