The AOC Maury is located in Roussillon, not far from Perpignan, and covers 1,150 hectares. The predominant grape variety here is Grenache Noir (80% of the plantings) and is complemented by Carignan, Syrah , and Mourvèdre for the reds , while Maccabeu, Muscat, Grenache Gris, and Grenache Blanc make up the majority of the white production. The soils in the area are very schistous and the climate is hot and dry. The appellation offers dry wines but is mainly known for its sublime Vins Doux Naturels (VDN). Very low yields are practiced to concentrate the grapes in aromas, sugars, and acids. Then, once the berries are pressed, the alcoholic fermentation will be initiated and stopped by the addition of wine alcohol (mutage), allowing the sugar present to be preserved. Depending on the type of wine, the aging process can subsequently last from a few months to several decades. This is the case here with this magnificent vintage from Mas Amiel, a reference in the region.
