Founded in 1997 by Olivier Waris and his wife Stéphanie, the champagne house  Waris-Hubert is located in Avize, in the heart of the Côte des Blancs. With a magnificent vineyard of 18 hectares planted mainly in Grand Cru and Premier Cru villages, the family cultivates Chardonnay and Pinot Noir grape varieties with finesse and precision. The champagnes produced are precise, elegant, and are the absolute reflection of the family terroirs. Special mention for the Blancs de Blancs endowed with a delicious mineral tension. An exceptional terroir: Avize, Oger, and the Champagne chalk

The style of Champagne Waris-Hubert is above all based on its remarkable vineyard heritage. Located on some of the finest terroirs of Champagne, the 18-hectare vineyard is indeed composed mainly of Grand Cru classified plots, notably in Avize, Cramant, and Oger. In addition, other plots are located in the commune of Aÿ, a historic terroir renowned for the nobility of its Pinot Noir and Pinot Meunier. Finally, the house also owns vines in the Premier Cru villages of Cuis, Grauves, and Bisseuil, as well as a few plots in the Sézannais.

In Avize, the historic heart of the Waris-Hubert vineyard, the exposed chalk gives the wines tension and purity.In Cramant, it brings finesse and floral elegance to the cuvées, while the Oger vineyard often provides more structure and depth. In Aÿ, the Pinot Noir expresses itself with fullness and vinosity, adding dimension and complexity to the blends.

This intimate connection between the vine and the soil, between the chalk of the Grands Crus and the diversity of Champagne soils, here gives rise to sparkling wines of great finesse, marked by seductive aromatic nuances in the bottles produced.

 

A precise style: finesse, complexity, and balance

The Waris-Hubert estate offers a very comprehensive range of champagnes. No less than 11 cuvées are indeed offered, not to mention an excellent Ratafia.The cuvées that form the core of the range are the following :

-Albescent Grand Cru Blanc de Blancs: the true signature of the estate, Albescent is a Brut Champagne 100% Chardonnay from the Grand Cru terroirs of Avize, Cramant, and Oger. Its color is golden and luminous, while minerality and indulgentise blend on the nose as well as on the palate. Notes of flint, chalk, toasted bread, vanilla, and a very elegant fruitiness (citrus, peach, pear) delight the taster, resulting in a distinguished, mineral, and elegant champagne. An absolute must-try !

-Lilyale Grand Cru Blanc de Blancs Zero Dosage : compared to Albescent, the Lilyale cuvée stands out for its lighter and purer profile. Always made from 100% Chardonnay, this magnificent bottle also highlights the elegance of the chalky Grands Crus of Avize, Cramant, and Oger. The color is pale and the nose opens with notes of flint and white flowers, complemented by a slightly brioche touch from the aging process. The palate is mineral, taut, and shows a beautiful harmony between freshness and roundness.

-Succulente Rosé Brut: as its name suggests, Succulente is a rosé offering an indulgent style, while maintaining the finesse inherent to Waris-Hubert champagnes. This blended rosé (85% Chardonnay and 15% Pinot Noir) with a pale pink color and copper highlights offers on the nose notes of citrus, small red fruits (redcurrant), as well as an elegant floral touch. A magnificent rosé champagne from the Premier Cru terroirs of Grauves and Bisseuil, to be savored as an aperitif or with a delicious red fruit dessert.

-Blanche Grand Cru Blanc de Blancs Extra Brut Vintage: the Blanche cuvée embodies the quintessence of the Avize terroir. Made from the estate's finest Chardonnay plots, it stands out for its precision and purity. The nose reveals notes of citrus, damp chalk, and white flowers. On the palate, it offers great aromatic clarity with a long, saline finish. This bottle captivates with its controlled intensity and very pure aromatic expression.

Beyond these four iconic references, the Waris-Hubert estate also offers other quality sparkling wines such as Armorial, Ercanbald, Estence, as well as prestigious cuvées like Sophos, aged 2 years in barrels, or Annexa, vintage Grand Cru Pinot Noir from the village of Aÿ.

 

Blanc de Blancs and Blanc de Noirs: what are the differences ?

In Champagne, the terms "Blanc de Blancs" and "Blanc de Noirs" simply indicate the grape varieties used in the production of the wine. This distinction is essential to understand the style and identity of Champagne cuvées.

 

Blanc de Blancs Champagne: purity and tension

A Blanc de Blancs Champagne is made exclusively from white grapes. In practice, and although other minor grape varieties may be used (Pinot Blanc, Arbane, Petit Meslier, etc.), this means that your bottle of champagne is very likely to be produced exclusively from Chardonnay.

The terroir of the Côte des Blancs is particularly renowned for its production of "Blanc de Blancs" champagnes. This is a style that appeals to lovers of crisp and refined bubbles, perfect as an aperitif or with delicate dishes.

 

Blanc de Noirs Champagne: structure and depth

Conversely, a Blanc de Noirs Champagne is made exclusively from black grape varieties vinified as white. The two main varieties of this style are Pinot Noir and Pinot Meunier. The Montagne de Reims, the Vallée de la Marne, and the Côte des Bar are the main areas of the Champagne vineyard where this type of champagne is found.

When tasting, a Blanc de Noirs generally offers a fuller nose, marked by more character and ripe fruity aromas. On the palate, the texture is more generous, with more wine-like quality and depth.
