The wine : What a great gastronomic rosé Château Simone offers us here! Its dark, salmon-colored hue sets the tone: this will be a wine of character destined for the table. Delicious and intense notes of red fruits (cherry, strawberry) are combined here with sweet spices (vanilla, cinnamon) as well as a floral touch evolving towards rose. The whole is superbly structured by a mineral framework that makes your mouth water as well as a slight tannic structure. A full-bodied bottle that can be enjoyed in its youth but which will also keep wonderfully in the cellar. The spicy and powerful side will then become even more prominent, to the delight of fans of the style. A unique rosé !

The estate : With its heritage of century-old vines, the Rougier family heads what is certainly the most renowned estate of the small Palette appellation. Nestled on the Langesse limestone, right next to Aix-en-Provence, the Château Simone is especially famous for its white. However, the red and rosé cuvées are also superb southern references of great precision. 25 hectares and a wide variety of grape varieties are cultivated and vinified with skill by the family.
