The AOC Minervois is located in two departments: Aude and Hérault and extends over 5,000 hectares, between Carcassonne and Béziers. The vineyard is one of the largest in the Languedoc-Roussillon region and mainly offers red wines (83%), as well as rosés (14% ) and white (3%). The climate here is hot and dryand the vines are protected from the northern winds by the Black Mountain. The terroir of the appellation is shale but also clay-limestone. The main grape varieties used are grenache, syrah and mourvedre in red as well as grenache white , the malvoisie, the maccabeu or even the marsanne and the roussanne for white wines.
