The AOC Minervois is located in two departments: Aude and Hérault and covers 5,000 hectares, between Carcassonne and Béziers. The vineyard is one of the largest in the Languedoc-Roussillon region and mainly produces red wines (83%), as well as rosés (14% ) and white (3%). The climate here is hot and dry and the vines are protected from the north winds by the Montagne Noire. The terroir of the appellation is schistous but also clay-limestone. The main grape varieties used are grenache, syrah and mourvèdre in red as well as grenache white , the malvasia, the maccabeu or even the marsanne and the roussanne for white wines.
