The wine : Just like the cuvées La Migoua and La Tourtine, Cabassaou is one of the great single-vineyard wines of Domaine Tempier and among the finest wines of the Bandol appellation. The old vines of this small terroir of 1.5 hectares arranged in restanques (terraces) are here subjected to a very hot climate with a slight breeze.
As a result, Cabassaou is the most powerful and intense of the 3 single-vineyard wines of the estate. This exceptional bottle indeed offers an incredible tannic and aromatic concentration. Aromas of dark fruits (cherry, blackcurrant, blackberry) are present, accompanied by generous spices (pepper, thyme, licorice, nutmeg) and well-integrated oak. Pairings with red meats or game are a must here, and only long aging will reveal the full potential of this incredible wine !

The estate : Iconic property of Provence, the Domaine Tempier is one of the pioneers who enabled the creation of the Bandol appellation in 1941. The Peyraud family and Daniel Ravier, the estate's director, make the most of their 60 hectares, composed of Mourvèdre (over 40 hectares) but also Grenache noir, Cinsault, Carignan, and Syrah. The 5 hectares of white are divided between Clairette (65%), Ugni blanc, Bourboulenc, Marsanne, and Rolle. The estate has an exceptional heritage of very old vines, notably allowing the production of three iconic cuvées: La Migoua, La Tourtine, and Cabassaou. Red wines, but also rosés and whites, are of impressively consistent quality and deserve the full attention of enthusiasts.
