The wine : Secret de Schistes is a delicious 100% Syrah cuvée, aged entirely in barrels for over a year. Here, the vines are surrounded by garrigue and grown on mosaic schists of the Haute Vallée de l'Agly, at 325m altitude. The result is a powerful, complex, and warm red wine, developing garrigue notes (thyme, rosemary), stewed black fruits (cherry, blackcurrant, blackberry), violet as well as an elegant, well-integrated oakiness bringing aromas of chocolate, vanilla, and other spices (pepper, clove, etc.). A slight touch of minerality is also present. A true velvet on the palate, to be absolutely opened at the table with red meats, poultry, and game.
