The wine : Like its little sister Infiniment, Secret de Schistes is also a 100% Syrah cuvée, aged entirely in barrels for over a year. The difference lies in the terroir: the vines here are surrounded by garrigue and grown on mosaic schists of the Haute Vallée de l'Agly, at an altitude of 325m. The result is a powerful, complex, and warm red wine, evolving on notes of garrigue (thyme, rosemary), stewed black fruits (cherry, blackcurrant, blackberry), violet as well as an elegant integrated oakiness bringing aromas of chocolate, vanilla, and other spices (pepper, clove, etc.). A slight touch of minerality is also present. A true velvet on the palate, to definitely open at the table with red meats, poultry, and game.
