The wine : Here is a rosé champagne that does not go unnoticed! Les Terres Roses from the Pierre Paillard house is indeed a champagne with character, both elegant and distinguished. Coming from the prestigious Bouzy terroir, a village classified as Grand Cru in the Montagne de Reims, this cuvée brilliantly reflects the richness of this village renowned for its great pinot noirs. The color here is salmon and the nose evokes a beautiful vinosity carried by notes of red fruits (raspberry, cherry, redcurrant), ripe citrus, apricot, as well as pastry aromas (almonds, yeast, toasted bread). The palate confirms, with elegance and freshness. The attack is lively, the aromatic richness is magnificent, and a long finish develops. Go for these top-level bubbles that you can pair as an aperitif but also with dishes such as semi-cooked salmon, spiced poultry, or even a red fruit dessert.

The estate : Located in Bouzy, a Grand Cru classified village at the foot of the Montagne de Reims, the estate Pierre Paillard is an 11-hectare vineyard run by the 8th generation of the family, brothers Antoine and Quentin Paillard.70% of the vineyard is planted with Pinot Noir, complemented by 3.5 hectares of Chardonnay. The champagnes produced by the two brothers are magnificent expressions of their village and terroirs, perfectly reflecting the vinosity of Bouzy’s Pinot Noirs as well as the richness and generosity of the local Chardonnays. In the vineyard, pesticides and herbicides have been banned for many years, and conversion to organic farming is now underway. The soils are meticulously tended, and particular attention is also paid to the selection of plant material. In the cellar, the Paillard approach is minimally interventionist, notably with minimal use of sulfur. The wines are vinified by parcel and age for up to 10 years on lees for the finest vintages.
