The wine: The vintage Les Parcelles, here in magnum format, shows a pure and precise expression of the classified Grand Cru village of Bouzy, superb terroir located at the foot of the Mountain of Reims. Endowed with a magnificent balance where the vinosity of Pinot noir combines with the creamyness of Chardonnay, here is a sparkling wine of great aromatic complexity. We delight in its aromas of ripe citrus fruits, green apple, brioche, fresh almonds, honey and toast. Furthermore, the dosage here is Extra Brut (only 2g/L) in order to be as close as possible to the terroir. A sparkling wine favorite of sublime finesse and which will be enjoyed both at the table and as an aperitif!

The estate: Located in Bouzy, a village classified as Grand Cru located at the foot of the Montagne de Reims, the Pierre Paillard estate is an 11-hectare farm run by the 8th generation of the family with brothers Antoine and Quentin Paillard. 70% of the grape variety is made up of Pinot noir and supplemented by 3.5 hectares of Chardonnay. The champagnes produced by the two brothers are magnificent expressions of their village and terroirs, wonderfully reflecting the vinosity of the Pinot Noirs from Bouzy as well as the richness and generosity of the few local Chardonnays. In the vineyard, pesticides and herbicides have been banned for many years and the conversion to organic is now underway. The soils are worked meticulously and very particular attention is also paid to the choice of plant material. In the cellar, the Paillard approach is minimally interventionist, particularly with minimal use of sulfur. The wines are vinified by plot and age for up to 10 years on slats for the finest vintages.
