What wines go best with sushi ?

The most successful pairings with sushi are generally based on wines that combine freshness, finesse, and aromatic precision.

Light white wines thus occupy a special place thanks to their ability to accompany raw fish (salmon, tuna, sea bream, etc.) without overpowering its delicacy. A Riesling from Alsace captivates with its tension, minerality, and citrus notes, while a Sancerre or a Pouilly-Fumé brings plenty of liveliness and elegance. Chardonnay enthusiasts can also turn to certain Burgundy wines, especially the most vibrant cuvées with minimal oak influence.

On the sparkling side, an Extra-Brut or Brut Nature Champagne is often an excellent choice thanks to its low dosage.

Light and fruity rosés can elegantly accompany California rolls, shrimp, or salmon-based dishes.

Finally, although not the first choice, light and supple red wines such as a Pinot Noir from Alsace or a fruity Gamay from Beaujolais, can also pair with sushi, especially with tuna, which is a fattier fish with a denser texture.

 

Wines to avoid with sushi

Conversely, certain styles of wine are much less suited to Japanese cuisine.

Powerful red wines, rich in tannins or heavily oaked easily overpower the delicate flavors of fish and sometimes create unpleasant metallic sensations on the palate.

Oaked cuvées often develop aromas of vanilla, coffee, or toasted bread that overshadow the finesse of sushi. It is also advisable to be cautious with very alcoholic wines, whose strength can unbalance the pairing.

Sweet wines or those too marked by ripe fruits are generally less harmonious with the iodized notes of seafood and the freshness of vinegared rice.

In short, with sushi, it is better to favor straightforward, fresh, and easy-to-drink wines in order to maintain a good balance at the table.
