Founded in the early 1990s by Jean-Pierre Jullien, this passionate winemaker chose the name "Cal Demoura", meaning "we must stay", out of love for his land. Located in Jonquières, at the foot of the Terrasses du Larzac, Mas Cal Demoura quickly established itself as one of the pioneers of the qualitative renewal of Languedoc wines.
Indeed, from its creation, the estate has been driven by the desire to break away from the image of mass production often associated with the region. In 2004, Vincent and Isabelle Goumard took up the torch with the same conviction: to produce signature wines, rooted, precise, and true to their land and terroir.
This in-depth work is accompanied by a strong ecological commitment. Mas Cal Demoura obtained organic certification as early as 2013, and went further by becoming officially certified in biodynamics in 2019. These practices allow the estate to fully express the uniqueness of its plots: soil life is preserved, natural balances are respected, and human intervention is reduced to the bare minimum.
Today, the wines of the Mas are considered a benchmark in the Terrasses du Larzac appellation, and more broadly throughout the Languedoc. This positioning is the result of deliberate choices: controlled yields, low-intervention winemaking, and aging processes tailored to each cuvée. Each bottle reflects a deep commitment to producing wines that are vibrant, authentic, and sustainable.
Mas Cal Demoura is therefore more than just a wine estate: it is a philosophy, a loyalty to the Jonquières terroir, and a constant pursuit of excellence in crafting distinctive cuvées, whether they are AOC or IGP. Whether you discover the estate through the sublime red wine Combariolles, or a more confidential white such as L’Étincelle (IGP Saint Guilhem le Désert), each cuvée bears the same signature: that of a place that is inhabited, alive, and deeply respected.
Perched on the heights of the charming village of Jonquières, Mas Cal Demoura flourishes on an exceptional terroir, a true gem of the Terrasses du Larzac. The vines take deep root in clay-limestone soils scattered with pebbles, emblematic characteristics of this wine-growing region. This geological richness, combining hard limestone, fine clays, and rolled pebbles, offers a mosaic of subsoils that give the wines remarkable complexity and unique finesse.
The local climate plays an equally crucial role: the altitude of the estate brings marked nighttime freshness, a beneficial phenomenon that slows the ripening of the grapes. This slower ripening allows the grape varieties, both red and white, to develop a perfect balance between acidity, aromatic concentration, and tannic structure. This freshness, an undeniable signature of Mas Cal Demoura wines, brings them a liveliness and elegance that appeal to both enthusiasts and critics.
Mas Cal Demoura cultivates a diversity of grape varieties carefully selected for their perfect suitability to the unique terroir of the Terrasses du Larzac.
For red wines, the estate relies on emblematic varieties of the region: Syrah, Grenache, Mourvèdre, Carignan, and Cinsault. These grape varieties offer the possibility to create complex and elegant blends, combining structure and freshness, while respecting the authentic expression of the terroir. Syrah brings finesse and spice, Grenache adds roundness and red fruits, Mourvèdre provides depth and balsamic notes, while Carignan and Cinsault enrich the wines with a beautiful texture and subtle nuances.
For white wines, the range is just as rich and balanced, with grape varieties such as Chenin, Clairette, Grenache Blanc, Vermentino, and sometimes Roussanne. These varieties make up more exclusive cuvées, but with great aromatic expressiveness, combining freshness, minerality, and elegance. Chenin, in particular, brings beautiful acidity and taste complexity, while Clairette and Grenache Blanc offer roundness and floral sweetness.
Each bottle here reflects meticulous work, with parcel-based vinification and very little intervention, respecting both the fruit and the land.
The Mas Cal Demoura estate offers a superb range of wines, from IGP wines to prestigious cuvées under the AOC Terrasses du Larzac appellation. This variety allows you to appreciate the full richness and complexity of the estate, thus offering a wide range of choices for all wine enthusiasts.
Among the flagship cuvées, Combariolles stands out as a powerful and distinguished red wine, made from old vines rooted in poor, stony soils. This cuvée reveals an elegant and deep structure, capable of fully developing after a few years of aging, offering remarkable aromatic complexity and great longevity.
More accessible in its youth, the Terre de Jonquières cuvée perfectly embodies the spirit of the estate: finesse, balance, and authentic expression of the terroir. This bottle offers a beautiful aromatic diversity and captivates with its natural elegance.
White wines such as L’Étincelle and Paroles de Pierre are exclusive and in IGP Saint-Guilhem-le-Désert. They present lighter, fruitier, and more supple profiles, designed for immediate and convivial consumption… while still retaining a true sense of terroir.Available individually or in a full case of 6 bottles, these wines combine simple pleasure, freshness, and excellent accessibility… perfect for accompanying casual meals!
The estate’s rosé, called Qu’es Aquo, perfectly embodies the spirit of Mas Cal Demoura: a fresh and vibrant cuvée crafted mainly from local grape varieties carefully selected to reveal the freshness and minerality typical of the Terrasses du Larzac terroir. With a clear and bright color, this rosé is characterized by subtle aromas of fresh red berries, delicate spices, and citrus fruits. On the palate, it displays beautiful liveliness with an elegant structure and a saline finish, a signature of the estate’s stony soils.
Finally, the two great single-plot red wines of the estate are Feu Sacré and Fragments.
Feu Sacré is an intense wine and is the result of a thoughtful blend of Grenache, Carignan, and Mourvèdre, grown on plots with poor, stony soils. It expresses a controlled power, combining spicy notes, ripe black fruits, and balsamic nuances. On the palate, Feu Sacré reveals a robust structure and silky tannins, supported by remarkable freshness due to the altitude. It is a wine of character, perfect for pairing with grilled meats, game, or mature cheeses, and gains in complexity with a few years of aging.
For its part, Fragments comes from a rigorous single-plot selection, highlighting Syrah, Mourvèdre, and Cinsault. This elegant red wine stands out for its delicate aromas of small red fruits, mild spices, and undergrowth, with a lovely freshness and silky texture. Fragments is a precise wine, ideal for enthusiasts seeking an elegant red, accessible from its youth but capable of gaining complexity over time. It pairs wonderfully with refined dishes, poultry, or even certain firm-fleshed fish.

The wines of Mas Cal Demoura, whether red or white, IGP or Terrasses du Larzac, deserve careful storage in order to reveal their full potential. A natural cellar or an electric wine cellar is perfect for preserving the quality of the wine over the long term.
