The most famous estate in the small Palette appellation is indeed the Château Simone. The Rougier family has run the property for more than two centuries and tends 25 hectares of vines mostly centenarians located on a northern slope of the Montaiguet hill, protecting them from the Mistral as well as heat strokes. Particularly recognized for its unique white wine composed mainly of Clairette, the property also excels thanks to its large rosé wine of character as well as its beautiful red for laying down . The organic certification has been official since the 2021 vintage.
