The most famous estate of the small Palette appellation, it is indeed: the Château Simone. The Rougier family  has been managing the property for over two centuries and cultivates 25 hectares of vines mostly centenarian located on a north slope of the Montaiguet hill, protecting them from the Mistral and heatwaves. Particularly renowned for its unique white wine composed mainly of Clairette, the estate also excels with its great characterful rosé wine  as well as its fine red for aging. The organic certification has been official since the 2021 vintage.
