Based in the village of Bouzy located at the foot of the Montagne de Reims, Benoît Paillard and his two sons Quentin and Antoine drive with brio 11 hectares of pinot noir divided up in this village classified as a Grand Cru. Coming from a long line of winegrowers, the family produces superb champagnes with character, in a vinous, tonic and complex style . In the vineyard, the organic conversion is underway and the siblings are very specific about their plant selection. In winemaking, the use of sulfur dioxide is kept to an absolute minimum and the wines are also aged in this low-touch approach. A house of character to absolutely discover!
