Located in the village of Bouzy at the foot of the Montagne de Reims, Benoît Paillard and his two sons Quentin and Antoine expertly manage 11 hectares of Pinot Noir spread across this Grand Cru classified village. Coming from a long line of winemakers, the family produces superb champagnes with character, in a vinous, lively, and complex style. In the vineyard, organic conversion is underway and the siblings are very meticulous about their plant selection. In winemaking, the use of sulfur dioxide is reduced to the strict minimum and the wines are also aged following this low-intervention approach. A house of character that is an absolute must-discover!
