The most famous estate of the small Palette appellation is undoubtedly this one: Château Simone. The Rougier family has managed the property for over two centuries and cultivates 25 hectares of vines, most of which are over a hundred years old, located on the northern slope of the Montaiguet hill, protecting them from the Mistral wind as well as heatwaves. Particularly renowned for its unique white wine, mainly composed of Clairette, the estate also excels thanks to its exceptional rosé wine with character as well as its fine red wine for aging. The organic certification has been official since the 2021 vintage.
