The wine : Here is a lovely Rully village representing the very essence of Pinot Noir. The wine is aged here for 15 months in barrels that have previously held 1 to 3 wines. The result is a rich, indulgent texture and concentration that brings out a very supple and fruity character delicate. Beautifully fragrant, this cuvée gracefully expresses notes of cherry, strawberry, and raspberry as well as subtle spices. Serve as an aperitif, with white meat, or with cheeses for a wonderful moment of Burgundian finesse!

The estate : With 6 hectares in the Rully AOC in Côte Chalonnaise, including 4.5 in Premier Crus (Mont-Palais, Rabourcé, and Les Cloux in white as well as Préaux and Clos du Chapitre in red), the Jaeger-Defaix estate has also had, since 2011, a 1.5-hectare plot in the Rully village red appellation. The 1er Cru Clos du Chapitre is a monopole located within the Rully 1er Cru "Chapitre" appellation and is entirely enclosed by stone walls. The winemaking history of Hélène Jaeger-Defaix began in 2002 when she took over a first plot belonging to her great-aunt Henriette Niepce. Hélène would later take control of all her family's plots, winemakers since the 16th century. The estate has been organically farmed since the 2009 vintage and the soil is maintained exclusively by plowing. Finally, Didier, Hélène's husband, is also a winemaker in Chablis and heads the Bernard Defaix estate.
