The DOCG Amarone della Valpolicella is one of the finest wine appellations in Italy. It is located in Veneto, west of Verona, and produces a straw wine red. Here, the black grape clusters (predominantly Corvina, Corvinone, and Rondinella) are harvested at full maturity and then traditionally left to dry on racks (wooden trays) for a period ranging from 100 to 120 days. During this time, the water contained in the grapes evaporates, concentrating the aromas, acids, and sugars contained in the berries.Once this operation (called appassimento) is completed, the berries are gently pressed and alcoholic fermentation can begin. Subsequently, long aging in large barrels and oak casks (minimum 24 months) is carried out, followed by a period of at least 6 months of rest in the bottle before being marketed. Amarone della Valpolicella is therefore a powerful wine, very intense, rich in alcohol and developing on an aromatic profile of candied red and black fruits, tobacco, spices, chocolate, etc. Every wine enthusiast must taste an Amarone at least once in their life!
