The DOCG Amarone della Valpolicella is one of the finest wine appellations in Italy. It is located in Veneto, to the west of Verona, and produces a red straw wine. Here, the bunches of black grapes (mainly Corvina, Corvinone, and Rondinella) are harvested at full maturity and then traditionally left to dry on racks (wooden trays) for a period ranging from 100 to 120 days. During this time, the water contained in the grapes evaporates, concentrating the aromas, acids, and sugars in the berries. Once this process (called appassimento) is complete, the berries are gently pressed and alcoholic fermentation can begin.Subsequently, extended aging in large oak casks and barrels (minimum 24 months) is carried out, followed by a period of at least 6 months of bottle resting before being released to the market. Amarone della Valpolicella is therefore a powerful wine, very intense, rich in alcohol, and develops aromas of candied red and black fruits, tobacco, spices, chocolate, etc. Every wine enthusiast should taste an Amarone at least once in their life!
