The wine : Like its little sister Infiniment, Secret de Schistes is also a 100% Syrah vintage which is aged entirely in barrels for more than a year. The difference lies in the terroir: the vines here are surrounded by scrubland and grown on mosaic schists of the Haute Vallée de l'Agly, at an altitude of 325m. The result is a powerful, complex and warm red wine, evolving on notes of garrigue (thyme, rosemary), jammed black fruits (cherry, blackcurrant, blackberry), violet as well as an elegant melted woodiness bringing aromas of chocolate, vanilla and other spices (pepper, cloves etc.). A light touch of minerality is also present. A real velvet in the mouth, to be enjoyed at the table with red meats, poultry and game.

The estate: Covering 54 hectares in AOC Côtes du Roussillon, Maury and IGP Côtes Catalanes, the Château de L'Ou belongs to Séverine and Philippe Bourrier. The property has been certified organic since 1998 and the couple is at the head of different islands with varied terroirs: alluvial marl, black shale and mosaic shale make up the soils of the different plots thanks to which the vines produce high quality wines, generally from small yields.
