The AOC Chablis is the largest appellation of Bourgogne. It is spread over 4,150 hectares of which approximately 800 classified as Premier Cru (Vaucoupins, Montée de Tonnerre etc.) and 100 hectares in Grand Cru including the famous Grenouilles or Vaudésir. The soils of the area are particularly calcareous and the climate here is continental. chardonnay is the one and only authorized grape variety. The white wines produced are particularly marked by aromas minerals and a good acidity. The most beautiful plots offer cuvées with more roundness and depth.
