The AOC Champagne covers the entire Champenoise region and extends over 34,300 hectares. Each year, more than 300 million bottles are produced within its 5 sub-regions: the Montagne de Reims, the Marne Valley, the Côte des Blancs, the Côte des Bar and the Côte de Sézanne. Each of these zones has its own characteristics but the majority of the vineyard's soils are based on chalk. The 3 main grape varieties of the region are pinot noir, pinot meunier as well as chardonnay. In addition, if the Côte des Blancs is the preferred area for chardonnay, allowing for the production of numerous champagnes Blanc de Blancs, the Côte des Bar is known as a grape variety The majority is Pinot Noir and more vintages will therefore be stamped Blanc de Noirs. Champagne follows a very precise manufacturing process allowing it to create the famous mousse or effervescence. The addition at the very end of the expedition liqueur (cane and wine sugar) gives the Champagne its final sugar level, categorizing it as Brut Nature, Extra Brut, Brut, Sec, Semi-dry or sweet. Finally, certain villages in Champagne are classified as Premier Cru (44) or Grand Cru (17), promoting the best terroirs of the vineyard.
