This red natural sweet wine underwent oxidative aging outdoors for 1 year in demijohns followed by 27 years (!) in oak casks. The result is a unique cuvée with a brick color in which aromas of prune and jammy black fruits mingle with notes of mocha, cocoa, dried fig, walnut and pepper in a sublime balance. A bottle to enjoy with blue-veined cheeses or chocolate desserts. A treat of complexity and delicacy! Bought in 1999 by Olivier Decelle (also owner of Château Jean Faure in Saint-Émilion and the Decelle estate in Burgundy), the estate today covers 155 hectares with mainly schist and clay-limestone soils. Since the beginning of the century, the vineyard has been converted to organic farming and is an absolute reference in Languedoc-Roussillon.
