Spirits: After the Profile 105, Neisson delights us once again the taste buds, this time offering this Profile 107 with a more intense and spicy character. First aged in old bourbon barrels, this beautiful amber rum will then experience a passage in new barrels specially prepared with a house heating called 107. The result ? A delicious deep elixir with a very indulgent profile. If the sugar cane is still very present, it feels a little less compared to the Profile 105 and a spicier side (clove, cinnamon) and toasted shines through. The aromas are also a little more pastry-like, especially on apricot and peach. A real crush!

The house : Smallest distillery in Martinique, Neisson looks like a convoluted kaleidoscope of green and pink houses that seem to have wanted to imitate the surrounding lush vegetation. Since 1932, three generations have succeeded each other preserving a know-how from the greatest Martinican tradition. Grégory Vernant-Neisson, young forty-something at the head of the distillery, explains about his rum, which benefits from the AOC Rhum Agricole Martinique: "The first thing to know about Martinican rum is that it is made from the juice of sugar cane directly, not molasses". Behind the Neisson philosophy, particular attention is paid to the terroir value. Because Martinique, with its climate and volcanic soil (especially in the north of the island where the distillery is located), stamps the aromatic palette of Neisson rums with particular flavors recognized throughout the world.
