Wine: Les Folatières is possibly the premier cru expressing at best all the finesse of the Puligny-Montrachet appellation. This superb cuvée produced by Alain Chavy contains all the elegance, minerality and purity of a great Chardonnay Burgundy. Notes of peach, citrus fruits, pear and butter mingle perfectly with an absolutely sublimely precise woodiness. The Estate: The Chavy are a large family of winegrowers from Puligny-Montrachet. In 1997, brothers Alain and Jean-Louis took over the estate from their father, Gérard Chavy. In 2003, they decided to create two separate vineyards and therefore divided the family farm equally. Today, Alain reigns over 10 hectares of vines, mostly in AOC Puligny-Montrachet, where he has many 1^er cru plots as well as a few rows of vines on the mythical Grand Cru Chevalier-Montrachet. The harvest is manual, the clay-limestone soil and the aging of the wines generally lasts 1 year in barrels before being completed by 6 months in vats in order to bind the whole. The cuvées are all of an excellent standard and finesse and minerality are the common markers of Alain Chavy's wines.
