The wine: This great wine from Château Simone with a majority de Clairette is incredibly complex and is one of the very best white wines from Provence. The aromatic strata are superimposed on each other in a bluffing length. Saline and iodized, but also gourmet thanks to its beautiful white fruits, this unique cuvée has a large mineral frame providing additional richness and character. Its aging for 18 months in small casks then a year in barrels gives it notes of hazelnut as well as a woody touch and vanilla giving the whole a perfect balance. A cuvée beyond time and codes!

The estate: With its heritage of old vines that are centuries old, the Rougier family is at the head of what is certainly the most famous cru of the small Palette appellation. Nestled on the Langesse limestone, just next to Aix-en-Provence, Château Simone is best known for its white wine. Yetthe red and rosé cuvées are also superb Southern references with great precision. 25 hectares and a wide variety of grape varieties are cultivated and vinified brilliantly by the family.
