The wine: This great wine from Château Simone with a majority de Clairette is unbelievably complex and constitutes one of the very best whites from Provence. The aromatic layers are superimposed on each other in bluffing length. Saline and iodine, but also gourmet thanks to its beautiful white fruits, this unique vintage is endowed with a large mineral framework providing additional richness and character. Its aging for 18 months in small tuns then a year in barrels gives it notes of hazelnut as well as a oak and vanilla giving the whole a perfect balance. A vintage outside of time and codes!

The estate: With its heritage of century-old vines, the Rougier family is at the head of what is certainly the most famous vintage of the small Palette appellation. Nestled on the Langesse limestone, just next to Aix-en-Provence, Château Simone is especially famous for its white wine. However the red and rosé vintages also constitute superb southern references of very great precision. 25 hectares and a wide variety of grape varieties are cultivated and vinified brilliantly by the family.
