Iconic variety of Jura (this one is moreover almost non-existent beyond its borders), this grape which extends here over 300 hectares within the AOC Arbois, Château-Chalon, L'Étoile as well as Côtes-du-Jura and is inseparable from Vin Jaune it produces. The latter is a wine that has not been topped up(evaporation is never completed) aged for a minimum of 6 years and 3 months in barrels. Thus, part of the wine is in direct contact with the air, allowing the formation of a protective veil of yeasts. Thanks to this incredible process, yellow wines offer enormous aromatic depth developing in particular notes of walnut, hazelnut, almond and curry. Yellow wine is also known to be able to be kept in the cellar for several centuries. Finally, Savagnin can also be vinified in the classic way.
