The wine: Cabassaou is the greatest wine of the Tempier estate and one of the most beautiful wines of the Bandol appellation. The old vines of this small terroir of 1.5 hectares organized in terraces are here subject to a very hot climate slightly windy.
As a result, Cabassaou is the most powerful and intense vintage of the 3 plots of the estate. This fantastic bottle indeed offers an incredible tannic and aromatic concentration. Aromas of black fruits (cherry, blackcurrant, blackberry) are felt, accompanied by generous spices (pepper, thyme, licorice , nutmeg) and a melted woodiness. Pairings with red meat or game are mandatory here and only a long aging will allow the full potential of this incredible wine to be revealed!

The estate: Iconic property of Provence, the domaine Tempier is one of the pioneers who allowed the creation of the Bandol appellation in 1941. The Peyraud family and Daniel Ravier, the director of the property, make the most of their 60 hectares, composed of Mourvèdre (more than 40 hectares) but also Grenache noir, Cinsault, Carignan and Syrah. The 5 hectares of white are distributed between the varieties Clairette (65%), Ugni blanc, Bourboulenc, Marsanne and Rolle. The estate has an exceptional heritage of very old vines allowing the production of three iconic vintages: La Migoua, La Tourtine, and Cabassaou. Red wines, as well as rosés and whites, are impressively consistent in their quality and deserve the full attention of wine lovers.
