The wine: Here is a delicious Rully village representing the very essence of Pinot noir. The wine is aged for 15 months in barrels that have already contained 1 to 3 wines. The result is  a marvellous and concentrated wine bringing out  a very delicate suppleness and fruitiness. Beautifully fragrant, this cuvée gracefully expresses notes of cherry, strawberry and raspberry as well as small spices. Serve as an aperitif, with white meat or cheese for a beautiful moment of Burgundian finesse!

The estate: With 6 hectares on the AOC Rully in Côte Chalonnaise including 4.5 in Premiers Crus (Mont-Palais, Rabourcé and Les Cloux in white as well as Préaux and Clos du Cadeau in red), the domaine Jaeger-Defaix has also had a 1.5 hectare plot in the village Rully rouge appellation since 2011. The 1er Cru Clos du Chapter is a monopoly located within the Rully 1er Cru “Chapter” appellation and is entirely surrounded by stony walls. Hélène Jaeger-Defaix's wine story began in 2002 when she took over a first plot belonging to her great-aunt Henriette Niepce. Hélène will subsequently take control of all the plots of her family, a winemaker since the 16th century. The farm has been cultivated organically since the 2009 vintage and soil maintenance is done solely by plowing. Finally, Didier, Hélène's husband, is also a winemaker in Chablis and at the head of the Bernard Defaix estate.
