The wine: What a slap! This Blanc des Millénaires 2006, preciously kept for 11 years in the cellar, is quite simply one of the greatest champagnes there are. Coming from 5 Côte des Blancs wines meticulously chosen by the Heidsieck house, the nose opens with ample and generous notes of butter and cream. The bubble caresses the palate and gives way to a structured mouth. An interminable length becomes clearer on a chalky, mineral and saline side, leading to a salivation that gives only one desire to the taster: to go back there. The estate: The house Charles Heidsieck is born in 1851 following the departure of Charles-Camille from the family business (Piper-Heidsieck) in order to create his own structure. Driven by quality, he will be one of the great precursors on the American market and will brilliantly develop great sparkling wines of character. The property remained in the family until the 1960s before coming under the control of the Cointreau group in the 1980s. Since 2010, the house has undergone a sublime revival thanks to the Descours family and has probably never been in better shape. With its own chalk quarries and 85 hectares of its own, the brand can continue to aim high.
