Wine: Monopoly of appellation exclusively owned by the Jaeger-Defaix family, the 1er Cru Clos du Chapitre produces vintage after vintage a racy, structured Pinot Noir that keeps well. Yields are strictly controlled here in order to develop power and length in the mouth and the wine is aged for 15 to 18 months in barrels. The result is a beautiful aromatic richness presenting intense notes of red and black fruits (cherry, plum, blackcurrant, raspberry, strawberry) as well as a touch of sub- wood and spices (pepper, liquorice etc.). Over the years, a leather and earthy appearance will develop, completing the complexity of this Grand Vin de Bourgogne. A real delight representing the elite of the AOC Rully!

The estate: Endowed with 6 hectares on the AOC Rully in Côte Chalonnaise including 4.5 in Premiers Crus (Mont-Palais, Rabourcé and Les Cloux in white as well as Préaux and Clos du Chapitre in red), the domaine Jaeger-Defaix also has since 2011 a 1.5 hectare plot in the Rully red village appellation. The 1er Cru Clos du Chapitre is a monopoly located within the Rully 1er Cru "Chaptre" appellation and is entirely surrounded by stone walls. Hélène Jaeger-Defaix's winemaking story began in 2002 when she took over a first plot belonging to her great-aunt Henriette Niepce. Hélène will then take control of all the plots of her family, winemakers since the 16th century. The farm has been grown organically since the 2009 vintage and the maintenance of the soil is done solely by plowing. Finally, Didier, Hélène's husband, is also a winegrower in Chablis and at the head of the Bernard Defaix estate.
