History of Pouilly-Fumé: a wine born from monks and stone

The history of the Pouilly-Fumé vineyard dates back to Roman times, over 1500 years ago. In the 5th century, it was then called Pauliacum super fluvium ligerim, a Latin name evoking the Roman road crossing these fertile lands. And yes, even back then, they already knew how to spot the best terroirs for making wine!

In the Middle Ages, starting from the 11th century, the Benedictine monks took over the local vineyards. These were indeed sold by the local lords to finance their crusades. At that time, the primary motivation of the monks was simply to ensure a sufficient stock of wine for the masses. Indeed, it was mostly white wine that was used for religious services. Why ? Because it stains less than red!

For several centuries, the monks significantly developed the regional vineyard. A nod to this era is still visible today with the famous plot called Loge aux Moines. As we mentioned, history is indeed present in every sip of Pouilly-Fumé!

After the French Revolution of 1789, the vineyards changed hands. The peasants then become owners, and the bottles travel easily to Paris thanks to the Loire and the Briare Canal, which connects the river to the Seine.

At the end of the 19th century, the vineyard will suffer the full brunt of the ravages of downy mildew and phylloxera. The vines are decimated, and many winemakers will then abandon the land. It will be necessary to wait until the beginning of the 20th century for some plots to be replanted, thanks to grafting on American wood resistant to phylloxera.

In 1937, Pouilly-Fumé officially becomes a controlled designation of origin (AOC). Its reputation already far exceeds French borders.Indeed, its wines can be found on tables all over Europe, as well as in the United States, Russia, and Japan.

Terroirs and Climate of Pouilly-Fumé

Pouilly-Fumé is a wine appellation located in the Loire Valley, on the right bank of the eponymous river and within the department of Nièvre. The AOC covers 1 400 hectares, exclusively dedicated to the Sauvignon grape variety. The harvesting, winemaking, and aging of the wines can be carried out in 7 communes, including Pouilly-sur-Loire, Saint-Andelain, and Tracy-sur-Loire.

The richness of Pouilly-Fumé wines is primarily linked to its exceptional terroir. Here, the soils are varied and evolve according to 4 types :

  • The Kimmeridgian marls (also known as "white lands"), mainly present in the heart of the vineyard in the villages of Pouilly-sur-Loire and Saint-Andelain. These are the most prevalent soils.
  • The Oxfordian limestones, also called "caillottes" and mainly present in the northeast of the vineyard.
  • The flints, primarily present in Saint-Andelain.
  • The siliceous terroirs, mainly located in the west of the appellation, particularly in the commune of Tracy-sur-Loire.

The climate of Pouilly-Fumé is of degraded oceanic type and is strongly influenced by the Loire, which acts as a thermal regulator. Winters are cold and summers are hot, but extreme variations are moderated by the presence of the river, thus creating a perfect environment for the slow and gradual maturation of sauvignon. The annual precipitation is around 600 millimeters on average.

The characteristics of Pouilly-Fumé wines

The mineral white wines of Pouilly-Fumé derive their uniqueness from the sauvignon blanc grape variety, also known as "blanc fumé". This noble variety is mainly renowned for its lively acidity as well as its expressive fruity aromas.

Within the AOC Pouilly-Fumé, the wines regularly offer vibrant citrus notes (lemon, grapefruit) of white fruits (peach, pear) and sometimes exotic fruits (passion fruit, mango, pineapple).Mentholated aromas may also appear. What makes Pouilly-Fumé wines special is their unique minerality, marked by notes of flint, directly inherited from the limestone soils of the vineyard. In terms of winemaking, vintners often opt for fermentations and aging in stainless steel tanks. Their goal: to preserve and reveal the aromatic purity of Sauvignon Blanc. The use of oak barrels is possible but quite marginal because the essence of Pouilly-Fumé wines remains their freshness and mineral precision. Very predominantly, Pouilly-Fumé wines are consumed young to appreciate all their aromatic liveliness.Nevertheless, the cuvées from the best terroirs have the ability to age wonderfully well for a decade or more. They then develop more concentrated aromas evolving towards honey, dried fruits, and offer a strong mineral character. The mineral brilliance of Pouilly-Fumé: the pure expression of Sauvignon blanc What to eat with a Pouilly-Fumé? The fruity wines of Pouilly-Fumé are excellent allies to enhance various dishes, especially those based on fish and seafood.Their freshness and aromatic complexity make them perfect partners for oysters, with the wine's sharp acidity superbly balancing the salinity of the shellfish.

For even more indulgence, pair your Pouilly-Fumé with a seafood platter : langoustine and crab also pair perfectly with the mineral and citrus notes of wines from the vineyard!

Prefer hot dishes? A grilled salmon, with its creamy and slightly smoky flesh, ideally reveals the iodized aromas of the local vintages. Pouilly wines can also enhance a roasted sea bass with fennel, their flint and citrus notes amplifying the freshness of the dish.

The sauvignons from the appellation are also not left behind when it comes to cheese ! With a Crottin de Chavignol, one of the best goat cheeses in the region, the combination is indeed magical: the liveliness of the wine cuts through the richness of the cheese and highlights its milky and herbal nuances.

Finally, for lovers of exotic cuisine, the Pouilly-Fumé pleasantly surprises alongside a mango sea bream ceviche. The lemony freshness of this Latin American dish pairs wonderfully with the citrus notes and minerality of the wine, creating a refreshing and elegant balance on the palate.

From a serving temperature perspective, Pouilly-Fumé is usually served between 8 and 10°C.This range indeed highlights the freshness of the region's wines while ideally revealing their expressive aromatics. For the richest and densest cuvées of the appellation, serving between 10-12°C can be considered.

The best Pouilly-Fumé

When talking about Pouilly-Fumé, it is impossible not to mention the domain Michel Redde et Fils, one of the most emblematic properties of the appellation! Sébastien and Romain, the two sons of Thierry Redde, have been leading the domain since 2017 and manage 40 hectares with sustainable farming. These latter  perpetuate  a work of excellence   thanks to meticulous vinifications and a very precise vineyard management.

The wines of the estate are renowned for their finesse as well as their minerality and are undoubtedly among the very best in the region.

Resolutely one of the best examples of what the appellation can offer!
